Hey guys! So I don’t know about you, but if you’re also paleo/gluten free living, don’t you ever miss bread?! Like, just good old sandwich bread?! The one single thing I miss most is waking up and being able to spread a whole bucketload (kidding, obviously) of peanut butter onto a piece of sandwich bread and inhaling that like its nothing. It was just, bliss.
Having been thinking about that for the LONGEST TIME ever, I decided it was time to step back from all the sweet loaves and banana breads, and just make some good old sandwich bread! I used coconut flour here, which is GREAT for you. It has a fantastic amount of fibre, protein, and its actually rather low in calories, not that I count them!
Personally I like a lot of crust on my bread, which is why I made mine really thin by using a larger and wider loaf tin & less eggs.
*** SO *** if you like your breads lighter and more “square”, add 2 eggs to this recipe to total 6 and not 4!!!
– 4 (or 6) eggs, read the bolded part above for clarification
– 1 cup of coconut flour
– 1/4 cup of flaxseed meal
– pinch salt
– 1 tablespoon honey
– 1 tsp each of baking powder & baking soda
– 1 tablespoon apple cider vinegar
Basically preheat your oven to 350F, mix everything together and pop it in for 40 minutes, cool, and serve!
