Hey everybody, hope your weekends are going well :). Unfortunately for me, I’ve been sick for the past few days, probably just a combination of a huge amount of work/school/volunteer stress and my body was just all “WHOAAAA SLOW DOWN”, you know?
So I spent the majority of my day in bed and I really wasn’t in the mood to do any interactive cooking, so I opted for an easy and quick dinner!
Now if you’re a vegetarian, you could easily use kale leaves braised in vegetable stock instead of beef, or if you want something less “thick”, use some bacon! But really, this is just my way of eliminating simple carbs (instead of wrapping beef and asparagus in a tortilla!).
The beef here I used were cut from a round, so it was extra lean. I marinaded it in thyme, worcestershire, olive oil, salt & pepper. But use anything you like! However you can NOT leave out the red onion at the end!! Well I mean unless you hate red onions but it really sent the dish over the edge of “yummy” territory into the terrain of “mindblowingly awesome” :)
Ingredients (3 portions):
– 3 large slices of beef (like, 1/8″ thick), marinaded however you like
– about one regular bundle of asparagus, trimmed
– salt & pepper
– half a red onion, thinly sliced
– olive oil
– 3 garlic cloves
Aside from marinating the meat beforehand, all you need to do is roast the asparagus and quickly cook the beef! So first of all, preheat your oven to 400F, and season your asparagus with salt & pepper, drizzling with some olive oil and chucking in the garlic cloves.
They only take about 20 minutes in an oven to cook, so at about 15 minutes in, preheat your griddle or skillet and cook the beef which will only take about a minute per side, max!
Let it slightly cool, thinly slice up half a red onion, and take the asparagus out of the oven. Just wrap everything up into oven proportions, toss the onions on top and drizzle on the pan juices! So quick, so effortless, and extremely delicious!
